Traditional hummus can be a little tough on sensitive stomachs, but don't despair—there’s a delicious, gut-friendly alternative that’s perfect for your snacking needs: Edamame Hummus!


This recipe not only skips the potential pitfalls of classic hummus but also delivers a flavorful punch with its bright green color and creamy texture. Packed with protein and fiber, this dip is not just easy on the gut but also an excellent choice for anyone looking to boost their nutrient intake. Servings: 4


Ingredients: 

  • 2 cups shelled edamame 

  • 1 lemon, juiced/zested 

  • 4 tablespoons garlic olive oil 

  • ½   teaspoon salt 

  • ⅛ teaspoon pepper

  • ¼  cup tahini 

  • ⅛ cup parsley 

  • 1 tablespoon miso 

  • ¼ teaspoon cumin 

  • ½ jalapeno, diced


Instructions: 

  1. Defrost or microwave the edamame shells. Add all ingredients besides the olive oil to a food processor. Blend until smooth. 

  2. While blending, slowly add in the olive oil. This will create a creamy emulsion. 

  3. Serve with carrots, cucumber, gluten free pretzels, tortilla chips, etc.
